Puzzler No.1 - Inulin going rock hard

I have a few small issues which it would be good to source the group’s wisdom with.

I have some inulin (Chicory) which has gone rock hard. This is the second time this has happened: I had to discard the previous batch as it was unusable - it even resists a chisel to get some off.

Of course I put Silica Gel sachets in with the inulin but that’s now somewhere in the rock.

With the previous batch I put it in the oven at a low heat to try to evaporate the water but that had little effect.

Anybody got any ideas how to make it usable again?
