If coffee (full of both AGEs/acrylamide and antioxidants) is pro-longevity, then is eating roasted/fried vegetables also pro-longevity? (even if not as good as raw veggies)

Veggies also have antioxidants to absorb the “oil damage”/acrylamide from damaged oil, esp if the oil is olive or avocado oil.

I drink all the coffee in the world so I want to feel less guilty about eating roasted veggies (though at home I just boil them)

It depends on your alternatives.

Drip coffee has 1.6 AGE KU/ 100 ml.
I don’t see any entry for roasted vegetables, but grilled have up to 260 AGE KU /100 g.

If you instead opted for baked macaroni and cheese it would be 1000 AGE KU/100 g.
McDonald’s Fish Fillet would be 6027 AGE KU/100 g.
Pan fried beef steak in olive oil would be 10,058 AGE KU/100g.

I put cooked legumes, cooked pumpkin seeds, and cooked corn in my salads. I am not afraid of them. One could do far worse but not that much better.
