Bananas are the junk food of fruit. High glycemic index.

Do you have evidence that eating high glycemic index foods like banana cause disease?

Yes - Matt Kaeberlein says as much, calling it a “snicker’s bar in fruit form”. I eat mine when they are pretty green (or add them to my smoothie when they are pretty green).

What would be the difference even if you didn’t eat them green?

The yellower (or blacker) they are, the higher the sugar content from ripening.

What I meant is, what truly is the difference in health outcomes?

Fewer spikes in blood sugar is better, I believe. But, of course, no double blind, placebo-controlled lifespan studies with green vs. yellow bananas in humans

Green bananas have mostly starch which digests to glucose in 15 minutes, so there should be almost no difference in blood sugar levels between Green and Yellow bananas, unless you take Acarbose to block digestion of starch.

Correction : Some of the starch in green bananas is naturally resistant to digestion, even if you don’t take Acarbose.

How do you know that and by how much?

Nope. But I’m thinking everyone here seems to want to avoid glucose spikes.
